Comfort food on a rainy day

After two days of beautiful unseasonably warm fall weather we were hit today with a cold, nasty and rainy day. Add this weather to my lingering cold that refuses to leave and I decided I was in need of comfort food for dinner. Nothing says comfort to me like Mac and Cheese so that's the direction I decided to take. 

Mac and Cheese With Turkey Kielbasa
2 cups medium shells pasta
2 Tbsp butter
1 cup fat free half and half
1 Tbsp Trader Joe 21 Seasoning Salute
1 package turkey kielbasa, diced
2 Tbsp olive oil
3 Tbsp flour
1 cup breadcrumbs
8 ounces Velveeta, cubed
1/4 cup shredded cheddar 
1/8 cup shredded colby jack

Preheat oven to 350. Cook shells pasta according to directions, drain. Mix breadcrumbs, 21 Seasoning Salute and olive oil together in a small bowl. 
Spray a pan with cooking spray and add the kielbasa, fry over medium heat for 8-10 minutes until browned.


 In a large saucepan melt butter over medium heat, stir in the flour until smooth and gradually whisk in the half and half. Bring to a boil, stir constantly for 2 minutes until it thickens. Add the Velveeta, lower heat to the medium and stir until the cheese has melted. Add in the shredded cheddar and stir until melted. Add in the shells and sausage and stir. Pour into a 2 quart casserole dish. 
Top with breadcrumbs and colby jack. 


Bake for 15 - 20 minutes and enjoy!
